i'd imagine you could use roll out, pre made pie dough if you didn't feel like doing scratch scratch. maybe even the croissant dough.  roll, fill, fold and bake. 

or use a sandwich pocket maker. roll out on to the plates, fill, roll the top sheet, close the lid and remove when golden.

totally. the only real limit is being sure your fill isn't too liquidy. 

you can even switch from savory to sweet and make pocket pies-- apple & peach work well off the top of my head.
