I watched this documentary last weekend, if I can find the link (i'll post it). The stated that American food especially Southern food is/was influenced by enslaved Africans since they did the cooking in white household.

yeah the yt southern food thing coming primarily from slave cooking makes sense to me...

I always assumed Southern food was a mixture of various ethnic dishes

I wish I could remember the name of the doc, it was very informative and on PBS. It did state other influences but that Africans introduced yam, rice, okra and peanuts.. I believe.
