Jamaica's national dish is ackee and salt fish. Ackee, Sapida blighia, a fruit named after Captain William Bligh, who took the fruit from West Africa to Jamaica. Salt fish is a headless cod that is dried, then salted to increase flavour and shelf life.

Traditionally a breakfast food but it can be dinner or lunch. With breakfast you'd serve it with chocolate-tea, coffee-tea, milo-tea or tea-tea (tea = any hot beverage) and maybe some fresh orange juice, otaheite apple juice or even grapefruit juice, whatever fruit is in season.

Yes, yes, yes to the meal revolving around freshly picked, in season vegetables including stewed okra & tomatoes, cabbage, lima beans, turnip greens, mustard greens, field peas, etc. There would be fish, ham, chicken, beef, etc but the vegetable selection was key.

My family is from North Carolina and this would be a simple lunch (Where as a person in the north may have soup & salad for a simple lunch):

I never hear of anyone still making the blood kind Dead. The popular one is like a mushier rice dressing/dirty rice stuffed inside a sausage casing

If mild sauce isn't sweet and it's spicy...then it isn't mumbo sauce. 
Mumbo sauce almost tastes like sweet and sour.
