I use the Alton Brown method. Crispest wings ever!
I steam out the excess fat then let the skin retract and rest in the fridge before I season and fry.

Ok this is teetering on Cookin For the Bae material bc it isn't pretty to look at but this thing was GOOD!!! I made a burrito bowl with guacamole and corn salsa and it was delicious Lord.
