Frosting makes a cake for me.

I learned a while ago that people's palets adjust to what they are used to. Even if it's nasty. I never take people seriously when they talk about their parents cooking.

One lady bought salty cookies to work one day. I learned later she doesn't like sweets so she is always light on sugar when she bakes.

Salty cookies?! I have a serious sweet tooth, so My feelings were hurt just reading that, I'm sorry your tastebuds had to experience such a thing [xx(]

I feel you on folks bragging about how relatives can "throw down" in the kitchen....then you taste the shyt and be like what the hell [:s]

Cake.
Cake.
Cakecakecakecake.LOL

It's rare I have a 'good' cake. Usually it is too dry. I wish folk knew frosting can't save a dry cake.

Moist, flavorful, and I'm a sucker for cream cheese frosting. If it's buttercream frosting, I'll more than likely scrape it all off.

I don't like a lot of frosting tho.

I had a slice of strawberry cake with cream cheese frosting from Publix the other day...so good I seriously thought about going all the way back for another slice when I was done, and I don't even care for sweets like that. I was strong tho.

Definitely a sucker for red velvet, carrot, and a bomb ass chocolate cake.

And bakery emulsions give a better long lasting flavor than extracts.

Agreed.
I've recently gotten into baking/cooking

Flavorful without artificial crap (besides food coloring and frosting... those things cannot be organic anyways), and moist. I like frosting but if frosting is the only tasty thing on the cake, it sucks.

Moisture
Smooth taste/blending of ingredients
Rise appropriate to the cake. If your angel food is sitting there lookin like a pound cake, GTFOHWTBS.
Rich
Minimal frosting/icing -- sweet and everywhere =\= automatic good. Sometimes all you need is a drizzle.

I will stop the world and melt with a good carrot cake.
