I have never looked back, since the day I brined a turkey.  I still brine if I am frying a turkey.  Co-sign with Diva's Buttermilk Brine, she has two versions.  I did the second version this past Thanksgiving, I like both.

I've only cooked turkey twice once with a frozen turkey and once with a fresh one.
I massage my turkey with olive oil, season it with poultry seasoning, salt and pepper and put it in the oven for about 4 hours or so. Both times it came out moist and flavorful. I prefer the fresh turkey.

I use the turkey giblets and juice to make stuffing. I just toast 12 slices of wheat bread and mix it up with the giblets and juice, add butter, then season with poultry seasoning, salt and pepper. Put it in the oven for about 25 minutes.

i tried her buttermilk brine this thanksgiving.
it was yummy and simple.

I do another type of brine usually.
made of chicken broth- kosher salt, sugar, onions, garlic, peppercorns and other seasonings. a drop of liquid smoke.
it takes a while to make the brine--- but the results are so worth it.

when you use a brine... it produces well seasoned turkey and the meat is so tender n juicy. yum

I need to try a brine. I basted that thing to death but it was good though. I used what I had in the cabinet but check out divascancook I've heard her turkey recipe is pretty good.
