I'm making banana pudding & Cheesecake tonight :)

we won't be around family this year so we decided to go with making a Turkey breast rather than a turkey.  I've never made one before.  has anyone done breast instead?  if so, any tips?

Here is a simple mix.


Apple cider (drink not vinegar), water, kosher salt, sugar, peppercorns, garlic, sliced onions, thyme, sage, peel of an orange, rosemary.

Put liquid in pot, start heating add salt stir well , add sugar stir well. Add herbs and spices. Stir mixture until boiling, remove from heat.   Allow mixture to cool thoroughly before pouring on turkey . Brine turkey for 12-24 hours. Rinse turkey thoroughly, pat dry well, season as usual.

HTH! The most important thing is to use kosher salt. I do not measure when I cook. Use 1 cup Kosher salt and 1 cup sugar.

Scotch bonnet? A whey mi a ask yuh, like mi kno know seh a Scotch bonnet. I used it in my mixture! If so pull the turkey out the brine, add more sugar to the brine and stir. Then place the turkey back in the brine. That will neutralize some of the heat.
