Ricky, Betty salad was created by the late Betty Timko, for her restaurants in Toledo, Perrysburg, Defiance.  I increase the ingredients for the amount of people to serve.  I assemble the salad in a large glass salad bowl.

Betty Salad

For the bottom layer:

2 cups mixed greens (head lettuce, romaine,  etc.)

1/2 cup bean sprouts, drained

1 hard-cooked egg, diced

1/4 cup cooked and crumbled bacon

For the top layer:

1 cup mixed greens

1/2 cup spinach

1 hard-cooked egg, diced

1/4 cup cooked and crumbled bacon

1/2 cup bean sprouts

1/2 cup Betty's Salad Dressing

Cook's note: There are other versions of this salad, but this is the original recipe.

Arrange bottom layer. Top with next layer of mixed greens, spinach, diced egg, crumbled bacon, and
bean sprouts. Serve with dressing on side or sprinkle dressing on top.

Yield: 1 large serving


Betty Salad Dressing

1 cup salad oil
3/4 cup sugar
1/4 teaspoon salt or 1/4 teaspoon salt, to taste
1/3 cup catsup
1/4 cup white vinegar
1 tablespoon Worcestershire sauce
1 small-to-medium onion

Mix in blender. Yield 8 servings

I make mine similar to this , I don't know exact measurements, nor do I often use them I usually use more vanilla & spices.


3 medium sweet potatoes (about 1 1/2 pounds)
4 tablespoons unsalted butter
2 large eggs
1/2 cup heavy cream
1/2 cup light brown sugar
1/4 cup regular sugar
1 tablespoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon fine salt
1/4 teaspoon freshly grated nutmeg
Pinch ground cloves

I combine all dry then add to wet mix until smooth and name for about 45 mins to an hour at 350.
