i've been making most of meals in this...

i love it because i can throw frozen meat in there first (when i buy ground meat i separate into individual portion prior to freezing)...ground meat...chicken thigh...Italian sausage ect ect ect....micro wave for 1 minute.  then add fresh cut veggies....spinach, cauliflower, carrots, celery, onions, snow peas...whatever...seasoning...then microwave for 4 mintues.  delish...

for breakfast i can replace the meat with scrambled egg and cheese...i just stir it all up in there and microwave for 4-5 minutes...wonderful..quick and easy...

Going for some of these for dessert tonight!

Carbquik Recipe: Quick Cinnamon Rolls

Ingredients:

Cinnamon Rolls:

1 2/3 cup Carbquik
1 Tbls Splenda
1/2 cup low-carb milk (or 1/4 cup cream and 1/4 cup water)
1/2 cup softened butter
1/4 cup brown sugar substitute
3 teaspoons cinnamon
1/2 cup nuts (Optional)

Icing:

1/4 block of cream cheese
1/3 cup UNSALTED Butter
3/4 cup Splenda
1 teaspoon vanilla

Instructions:

Cinnamon Rolls:

In a bowl combine Carbquik, 1 Tbls Splenda and milk until moist. Let it sit for a minute. Stir again until well combined. Sprinkle some Carbquik on a kneading surface and turn dough onto surface.
Knead for approx. 3-4 minutes. Add more carbquik if necessary to keep dough from sticking.
Roll into a rectangle shape. (It helped me to roll only in one direction instead of back and forth.)
Spread butter over entire rectangle, then sprinkle with cinnamon and brown sugar substitute.
Roll up lengthwise and slice into 6-8 rolls.
Bake at 400 degreees for 20 minutes. Spread icing over top and serve warm!

Icing:

Whip on high speed for 2 minutes

Had a Jack in the Box cheeseburger without the buns.

Lettuce was my buns.

I may have gone over my limit as a result. Fried up some good meat with butter earlier today though!

Today was a day of good eating~

Yea I've been eating pretty good lately myself. If you think outside the box, you can still enjoy food on this diet!
I know I'm starting to enter Ketosis because my urine is hella foamy which is another side effect.
