I used to go to a restaurant that had grilled vegetables in their salads. It was so gooooooood. Grilled broccoli, zucchini, squash and carrots. I used to get that with caesar salad dressing. No meat was needed. Some parmesan cheese and its on.
ETA: Another favorite salad is spinach, carrots, sunflower seeds and raisins with olive oil and every once in awhile a boil egg.

I love salads.
I usually put:
lettuce
spinach
shredded cheese
blue cheese
cucumber slices
red and orange bell pepper
peaches
croutons
sunflower seeds
pepperchinis
black olives
boiled eggs
grilled chicken breast or breaded on rare occassions
shredded carrots
thousand island dressing
or house italian dressing from olive garden if I am eating a salad with completely different things

Also
Corn and gungo peas. Gungo peas have a light flavour raw, so they mainly add a bit of a textural difference. You could always roast them or sautee them in broth or seasoning to give them a little flavor. They can be used in place of croutons, too.

Initially I thought the thread would go another way before I clicked.......
Anyway,
I like my salads freshly washed with cucumbers, tomatoes, carrots, mushrooms and no sauce!
