I made some shrimp kabobs last night and they were so good. I had them for lunch and dinner. For lunch I had them with steamed veggies and for dinner I had them with a few tablespoons of spinach dip (store bought-tostitos brand) and used celery sticks as my "chips".
Ingredients: bag of defrosted shrimp (cleaned, peeled and deveined) or fresh shrimp
Marinade (I eyeballed the measurements) -oil of your choice -balsamic vinegar (if you don't like balsamic vinegar you can leave it out) -honey -salt -pepper -chili powder -curry powder -garlic powder -homemade scotch bonnet hot sauce (or whatever hot sauce you like. You can leave this out as well if you want)
Mix marinade ingredients together and adjust taste to your liking, then add shrimp in a ziplock bag and pour marinade over the shrimp. Make sure the shrimp are evenly coated and let them marinate for at least 30 minutes.
Put shrimp on wooden skewers and grill (i used the george foreman) Take remaining marinade in the ziplock bag and reduce it in a sauce pan to pour over cooked shrimp Eat and enjoy!
