I've never gained weight from fufu...I stayed pretty consistent. Even with a month of daily eating, but I'm sure metabolic rate and all that has something to do with it, too.

Cosigning with those that say the starch in fufu metabolizes to sugar. I LOVE fufu. Egusi soup is the best! I wish I could find a guy that was into African food and Nigerian movies. Cry

I've never tried it, but when my husband is home i eat rice about 4 - 5 times a week. He can't go to long without rice, neither can i. But reading this thread has me craving cassava.

I dont think so. Its depends on how you make it. People use a lot of different things in the Westernized version of it. I used to eat it religiously I mean literally every other night so even every night since I was old enough to eat solid foods. I was always skinny for my age as was my entire family. The only reason I started to gain weight was because I started eating more Westernized food.
