I'm about to order some 16 and 18 inch italian yaki hair.  How many bundles do you guys think that I will need for a realistic look.  I don't like the super thick look and will probably get a closure too.

If you can afford it get 3 just to make sure your tracks not showing. You can always thin the hair with a razor comb or use it later.

I'd do three. I have a very small head but 2 packs wasn't enought for my ly install. I ended up supplementing
with some bss hair for a while.

Cvs are getting really skimp with their bundles these days. They aren't as full as the used to be.
It's better to have a little to much than to not have enough.
