I used to buy mine frozen, then thaw it. Now I just buy it already cooked from a popular Barbecue place. Depends on how busy I am and what else I have to cook, I'll sometimes get their cornbread dressing (uncooked), too.

I need to try a brine. I basted that thing to death but it was good though. I used what I had in the cabinet but check out divascancook I've heard her turkey recipe is pretty good.

i tried her buttermilk brine this thanksgiving. it was yummy and simple.
I do another type of brine usually. made of chicken broth- kosher salt, sugar, onions, garlic, peppercorns and other seasonings. a drop of liquid smoke. it takes a while to make the brine--- but the results are so worth it.
when you use a brine... it produces well seasoned turkey and the meat is so tender n juicy. yum

I've only cooked turkey twice once with a frozen turkey and once with a fresh one. I massage my turkey with olive oil, season it with poultry seasoning, salt and pepper and put it in the oven for about 4 hours or so. Both times it came out moist and flavorful. I prefer the fresh turkey.
I use the turkey giblets and juice to make stuffing. I just toast 12 slices of wheat bread and mix it up with the giblets and juice, add butter, then season with poultry seasoning, salt and pepper. Put it in the oven for about 25 minutes.
