If u eat spicy food...i just posted this in the curry thread:

Chicken Curry with Rice Pilau

1 whole chicken - skinned and chopped up
5 tblspoons - Olive oil
2 tblespons - Garlic puree/mix
2 tablespoons - cardamon powder
1 tblespoon Pilau mix - ground cinnamon, cardamon, cloves mixed in equal parts
3 tablesoons - Curry powder
3 onions - chopped - i prefer red onions
2 cups of rice (basmati is the preffered brand to avoid sticky rice)
Boiling 4 cups of water or chicken stock
Salt to taste
Red crushed pepper
Cilantro chopped
Three ripe tomatoes or two spoons of tomato paste

cooking. this recipe can be used multiple ways.

Method one.
heat some of the oil in your rice pan at medium high
add about one onion and let it cook (2 mins)
reduce heat to med. and add the pilau mix to the pan. Cook this till the aroma changes to something you could eat right then .. lol. 2 mins or so..keep stirring so it doesnt stick on the pan
Add the rice to the mix and make sure all the rice is coated.
Add the boiling hot water or chicken stock
Let this mixture cook on med-high until all the liquid is almost finished. Avoid stirring this while its cooking to avoid breaking the rice
when the liquid is almost finished, lower the heat to the lowest setting, stir the rice to mix it with the onions (they will have floated to the top)
Cover and let is cook for another 5-10 mins depending on elecric or gas cooking.

For the chicken.
Coat the chicken with a mix of curry powder, garlic, cardamon, little salt and some olive oil
Add this mixture into a heated pan and let it cook for about 10 mins turning occasionally to avoid burning.
When this is done remove the chicken from the pan .. add a little oil and add the remaining onions into the pan. let this cook
Add the chicken to the oinions and mix well...let it finish any liquid it has before you add any yourself.
Add this in very small increments too...a cup at a time depending on how much soup you want
You can add your tomato at this point to thicken the soup
Let is cook covered - about 25-30 minutes. I like mine completely falling off the bone.
Once cooked - add the choped cilantro and hot pepper to the mix and serve over rice

1 cup of rice is a big portion of carbs, KK.Shocked
Try a google search on "martha stewart chicken piccata". I think that i will make that for dinner with steamed asparagus on the side. No rice though.

KK is it a breast you have?

If yes, you can cut it in many pieces, lightly fry it with your favorites spices and mix it with the rice.

If you have some shrimps and/or vegetables add them to the mix for a quick paellaSmile

My favorite is seasoning my chicken with Adobo seasoning and i lightly fry it with some olive oil. No flower or chicken breader. Flip season the other side then add some Montreal Grill Mate Seasoning! That is the bomb! It cooks in like 10 min and its lean and the chicken is so good! Have you tried brown rice? I love it and its much healthier than white rice!
